Are they digital or manual? How do you change them?

Different types on different stocks!
The A, C & D stocks are all still fitted with manual blinds, which are changed using a handle.
The newer stocks (and refurbished D stocks) use digital blinds, set by entering a destination code on a keypad.

If they are like the busses in Swansea, then yes in theory, but not easily. You needed a laptop connected to the unit with a specific cable and (I presume) a specific piece of software.

Can you make up your own destinations? Sadly not. At least not that I'm aware of! The digital boards we had on the buses required a laptop plugged into them to reprogram them. I think there'd be a few rude comments if we could set our own messages! ;D Edit: Chris just beat me to the laptop thingy!

In Croatia the most popular system is the flip-dot system.

So it is possible on them. I don't know about any other though!

Possibly a standard set of destinations on all 92TS? Some of them do go to Waterloo, and it would cost money to reprogram them all to remove Ongar.
I have read that the South Acton shuttle used to carry destination plates at one end reading "SOUTH ACTON / ALL STATIONS" and at the other "ACTON / NON STOP". The joke being that there were no intermediate stations.

Actually they don't go to waterloo - the W&C line has it's own entirely seperate stock, which have to be craned in and out for major repairs. And the 92ts started after the Ongar branch was closed, so it should never have been put on the trains in the first place - perhaps Tubeoperator92 can confirm?

The 92TS definately has North Weald and Ongar on its "blinds". Was doing some work at Hainault for Carvens Heritage Trains Ltd a while back and we had the pleasure of shunting a 92ts round the depot. The DDM programmed the above destinations in for us to photograph. Why is it I never have a camera when I need one!!

The W&C units all ran their first 1000kms on the Central line.

They can show Ongar because they were ordered and started running before the Ongar lind closed. If LU had not been given authority to close the line, 4 car 92 stock would have worked it. An 8 car unit once ran to Ongar for testing, with I heard a battery loco ready to bring it back if nessesary. I quite often used to put up Ongar on my last trip back to Loughton for a laugh.

I think it got to Ongar, but it might of got turned back, I can't honestly remember, I do know it made it back without the aid of the battery loco.

and half the time with the 92ts route display is that its not working properly, so you end up with the display saying LOU ON. If I notice this, I usually make additional announcements. When looking at the display closely, you can see a slight flickering. I was told that there is a resons for this, but I cant remember as the bloke that told me just rattled it out. Strange that the 73ts has Ealing Broadway as a destination available for display. IS someone trying to say something? With the refurbed 78's, do they have a display to show South Harrow??? ;D

The current D stock blinds no longer have the East London Line destinations, although some cabs have the sticker listing the destinations still including them.
And on one C stock I encountered, the sticker bore no relation to the blind! Not helpful when you're trying to quickly change it at Earls Court from Wimbledon to Ealing Broadway!

As far as I'm aware it never reached Ongar. I think it got to Ongar, but it might of got turned back, I can't honestly remember, I do know it made it back without the aid of the battery loco. I'm pretty certain I've seen a picture of it at North Weald, without the Battery Loco. Incidentally, despite the DVA being upgraded, I was able to set up the 'No service between Epping and Ongar' message earlier this year while on a test run.
