So far as I'm aware they're the same, though - at least as far as the escalators are concerned - perhaps they're of a more 'robust' construction, given that they're often fully loaded.
Certainly the companies that install and maintain them are the same as those that you see elsewhere.
Unless anyone knows differently, of course?

Are all the escalators & lifts still supplied by OTIS? Various manufacturers are involved in lift/escalator replacements. Recent MIP lifts have been supplied by OTIS but the whole JLE lifts were supplied by KONE. Other reasonably recent are: Hammersmith/Green Park- BENNIE MIP Stratford- PORN & DUNWOODY Edgware Road- ELLIS-McDOUGALL total 111 as at 31/12/04 recent escalators: King's Cross- KONE Canary Wharf- O&K Wanstead/Gants Hill/Bethnal Green- CNIM Liverpool Street- APV total 412 as at 31/12/04 So, very varied!

my experience would say that they also tend to be that little bit quicker and wider than typical 'shopping centre' escalators

Our older installations were built to a better standard than shop installations as the wear and tear, loadings and usage was much heavier than your average shop. Nowdays however, it seems that we use modified shop installations. This is apparent at Angel where the engineers had to be called out at least once a day because the modified shop escalator just couldn't cope with the abuse it was getting in everyday service. Haven't spoken to the SS there for a few years now so things may have improved, esp now the type of maintanence contract has changed.
