Pudding Mill Lane can be open for the Olympics, only if it was big enough. But it is only a small island with a small ticket hall, and it is tempting for tourists to get off at the nearest station possible and jam up the narrow passageway. It cannot be open because it is within the Olympic Park security cordon. The fact that it is tiny and couldn't handle the crowds is a side issue given the wider context.

If the station was large enough to handle significant crowds then the security courdon would have been designed to allow use of the station. As it isn't, the courdon didn't need to accommodate it and so it doesn't - the two factors are interlinked.

In todays' Newham Recorder there is an Olympic supplement with a new airiel photograph show the work on the new alignment of the DLR. It looks like double track all the way to stratford with Pudding Mill Lane station moved approx 20 yards south. I would then think the slow westbound Anglia line would occupy the old station position and the crossrail tracks come up between the slow lines.
Ps. Google earth has been updated but still looks 6 months out of date.
