Why does Canon Street LU close on weekends?

I don't think there are any NR services on a Sunday not sure about Saturdays.

Correct, Cannon Street has no National Rail services on a Sunday, which is why the tube station is also closed on Sundays. The station is undergoing some work at the moment, and given how well the immediate area is served by tube stations and bus services, it's probably felt that it wouldn't inconvenience too many passengers if the station was closed on Saturdays as well whilst the work was carried out.

Will re-open on Saturdays when the project work is finished. The situation on Sundays could change with the re-building of London Bridge when pairs of platforms have to close and track work will be required.

Yes it has. Perhaps if the Fleet line's original proposed route (via Ludgate circus) ever went ahead, Cannon Street would have been open everyday.

It seems to be barely used on weekends, from my observation, because when I do end up at Cannon Street, it is the only London terminus station I've seen empty, during the day. There are services on the NR station on Saturdays.

Cannon Street is occasionally open on Sundays, if the NR station is open - for example when there is engineering work between London Bridge and Charing Cross - also an opportunity to do some "rare" track-bashing, as a common practice used to be to operate a shuttle between CS and CX using one track, allowing work on the other three.

Saturday closures will continue until at least 31 August for the continuing development work.
The station was open for the full traffic day and weekends during the Olympic/Paralympic Games.
